Today it’s Waffles Day back in Sweden – and believe it or not, it’s quite well celebrated! And I do miss my waffles. The Swedish kind. Thin and crispy. With jam and cream.

If I am very, very lucky I might have a waffle mix at home (I admit, am far too lazy to make my own) and if so, then my dinner is pretty much sorted. Yes, dinner. Who said waffles could only be had for breakfast… 🙂
